Cazcanes, best known for its range of additive-free tequilas, made the jump into uncertified distillates with Nuestras Raices. The spirit (which, we must emphasize again, is not technically tequila) is made using Blue Weber agaves chopped by axe before being processed through a converted six-cylinder car engine, open-air fermented with wild yeasts and distilled over wood-fired stainless steel stills.
